I’m always creating something

“My job is to create the right assemblages to make a cider that meet the demands of our clients. To do so I choose the vats according to the characteristics found by the laboratory and the observations made during tasting. The aim is to ensure that there is no difference in taste from one year to the next. One of the difficulties lies in the fact that I am working with a living product, something that varies from year to year. I am always creating something, it’s wonderful! Managing the stock is also important. The consumer must be able to find the cider of his choice at any time of year.”
